Nourishing Chicken Broth

With winter in full swing, it’s time for a little comfort food.

This versatile broth can not only be used as added flavour to dishes, but is just as delicious served on its own.

An immune-boosting recipe that is quick to prep and can be left simmering away to enhance the flavours.

The below recipe will give 12 servings.

Ingredients:

3 Whole Chicken Carcasses (or 2 lbs of chicken bones)
5 Carrots (peeled and chopped)
8 stalks of Celery (chopped)
3 tbsps Apple Cider Vinegar
1 tbsp Sea Salt
3 cups Parsley (chopped)
3 Bay Leaf
3.5 litres Water

 

Directions:

  • Add all the ingredients in a large soup pot. Cover with a lid, bring to the boil and then reduce heat and simmer for 8 hours. Topping up with water if needed.
  • After 8 hours, strain the broth through a strainer or mesh sack. Discard the vegetables that you strained out. Allow broth to cool. Once cool, remove the layer of fat that forms on the top and discard or save it for future cooking.
  • Freeze broth until ready to use.
