Leafy Green Stir Fry


As we enter Summer, the variety of fresh greens available increases, making it a perfect time for a Leafy Green Stir Fry.

1 TBSP Sesame Oil
5 Stalks of Celery
1 TBSP Coriander Seeds
1 TBSP Cumin Seeds
1/2 TBSP Tumeric Powder
1 bag of Spinach
1 bag of Kale
2 TBSP Coconut Aminos
Juice from 1 Lemon
Black Pepper
1/4 Cup Water

1. Add oil and Celery stalks to a pot, then cook on a low heat and cover.
2. After 10 minutes stir the celery.
3. Add the coriander seeds, cumin seeds and turmeric powder and cover and cook on a low heat.
4. After 5 minutes stir and add half the spinach and kale, coconut aminos, lemon juice, black pepper, salt and water.
5. Cover and cook on a low heat for 5 minutes.
6. Add remaining spinach and kale and cover and cook for 15 minutes
7. Stir and serve
