Apple Cauliflower Porridge

High in fibre and vitamins C and K, cauliflower may be an unconventional way to start your day, but we’re confident this recipe will become a staple on your breakfast table.

Ready in under 10 minutes, you can get creative with your choice of toppings from fresh nuts to nuts or a splash of vanilla extract.

Ingredients:

  • 1 tin Canned Coconut Milk (full fat)
  • 1 head Cauliflower (shredded into rice)
  • 1 1/2 tsps Honey
  • 1 Apple (core and stem removed, chopped)
  • 1 tbsp Cinnamon

Directions:

  • In a large pan, combine the coconut milk and cauliflower rice over medium heat. Cook until the cauliflower is tender, about 5 to 8 minutes.
  • Divide into bowls and top with apple and cinnamon and enjoy!

 

Good to know:

This dish will keep in the fridge for up to 2 days in an airtight container.

No coconut milk? Opt for almond milk instead.
