Apple, Beetroot and Carrot Slaw

This fresh, crunchy slaw will brighten up any lunch or dinner table.

With just 8 ingredients and taking less than 10 minutes, it couldn’t be simpler to make.

The below recipe will give three servings.

Ingredients:

2 Beetroot (medium-size, peeled, julienned)
2 Carrots (julienned)
2 cups Kale Leaves (shredded)
1 Apple (julienned)
1/2 Orange (juiced)
1/2 Lemon (juiced)
1/8 tsp Sea Salt
1/4 cup Parsley (chopped)

 

Directions:

  • In a large bowl add the beets, carrots, kale and apple.

  • In a small bowl, whisk together the orange juice, lemon juice and sea salt.

  • Add the dressing to the salad and toss to combine. Top with parsley and
    enjoy!

 

Good to know:

This dish will keep in the fridge for up to 3 days in an airtight container.
