Grilled Mediterranean Chicken Kebabs

Juicy Mediterranean chicken kebabs marinated in herbs and olive oil, perfect for a light, protein-rich dinner or spring grilling.

INGREDIENTS
1 tbsp Oregano (dried)
2 tbsps Extra Virgin Olive Oil (divided)
2 Chicken Breast (boneless, skinless, diced into cubes)
1 Courgette (large)
1 Red Bell Pepper (cut into chunks)
1 Red Onion (cut into wedges)
6 Barbecue Skewers

DIRECTIONS
01. Combine the oregano and 1/2 of the olive oil in a mixing bowl with salt & pepper. Add in the cubed chicken and vegetables and mix well. Place in the fridge and let marinate.
02. Slide the marinated cubed chicken and vegetables onto the skewers.
03. Preheat the grill to medium to high heat.
04. Grill the kebabs for 6 to 8 minutes per side or until chicken is cooked through.
05 Remove the kebabs from the grill and divide onto plates. Enjoy!

NOTES
SERVE THEM WITH
Rice, quinoa, grilled potatoes and/or tzatziki sauce.
LEFTOVERS
Store covered in an airtight container in the fridge up to three days.
WOODEN SKEWERS
If grilling with wooden skewers, be sure to soak them in water before using to avoid them catching fire on the grill.
